Moroccan Chicken Salad

Use arugula and cucumber to make the base for your salad

Garlic yogurt sauce:

500ml halal yogurt

7 garlic cloves

¼ cup olive oil

Juice ½ lemon

Salt &pepper to taste

Mince garlic, then mix all other ingredients into yogurt and kettle marinade 24 hrs

Chicken marinade:

½ bulb white onion

4 cloves garlic

½ bunch parsley

1 tbl olive oil

 Rough chop all ingredients then rub onto chicken


¾ tsp coriander seeds

¾ tsp cumin seeds

2 clove garlic roasted

¾ cup extra virgin olive oil

Zest & Juice ½ lemon

1 tsp paprika

¼ tsp cayenne

1 cup cilantro

1 cup parsley

¼ cup mint

Rough chop all ingredients and mix let ingredients mild for 20 mins

Pickled veg:

1tbl salt

¼ cup sugar

1 ltr water

500ml  red wine vinegar

½ head red onion

1 lrg turnip.

Cut turnips into large sticks, and slice the red onion. Take all other ingredients and put I to a nonreactive pot bring to a boil then pour the hot liquid over turnip and onion. Let cool submerged in liquid till cold then serve
